Chilling Red Wine?

Yup, you read it correctly...chilling red wines! Most of us know that we are supposed to chill whites and serve reds at room temp. However, there are a few exceptions. Some reds actually benefit from chilling. Lighter bodied reds such as boujulais, Pinot Noir, and even some Zinfandel wines taste great with a bit of chilling on them.

Does that mean you should serve them ice cold? Not exactly, we find that many of the fruity notes found in these wines really stand out when they are slightly chilled. What we recommend is to put them in the chiller about 30 minutes before serving. Or if you'd prefer to store them in the refrigerator, we suggest taking them out to sit for about 30 minutes at room temp to take some of the chill off.
